Getting to work after a full hour of effort can leave you feeling totally ravenous. It’s essential to replace those lost calories as soon as possible and I normally make sure I have a second breakfast almost immediately after reaching my desk. Often I’ll take bagels or croissants and I went through a period of having instant porridge pots every morning. These were great because they were self contained (little plastic pots), quick (just add hot water), warming, filling and a slow release of energy through the morning.
However, I found myself tiring of them after a while. Also, the plastic is very bad for the environment.
I’m now going to share with you one of my current favourite work breakfasts. They are also self contained, quick, warming, filling and above all totally delicious! There’s a little bit of preparation involved but it’s not difficult and you can make a big batch in one go (we made 17 in the last go). Read on for instructions on how to make these amazing breakfast muffins.
Ingredients

Simple ingredients available from any supermarket.
- 17 breakfast muffins (someone got hungry while making these and ate 1…)
- 6 rashers of bacon
- 6 rashers of turkey
- 16 sausages
- 12 eggs
- Cheese
Method
Cooking instructions are not difficult: stick the ingredients in the oven (180°C) or frying pan and wait until they look done.
- Slice the muffins and spread some butter.

2. Beat the eggs with salt and pepper then bake in the oven until golden.

3. Slice the sausages, lay on a baking tray and bake in the oven until caramelized.

4. Fry the bacon and turkey rashers until as crispy as you like them.

5. Slice enough pieces of baking paper to wrap all the muffins and an equal amount of kitchen towel. Slightly dampen the kitchen towel as this will help in the reheating process. The muffins are going to be reheated in a microwave and having the damp kitchen towel creates steam inside the baking paper which keeps the muffins nice and moist.

Assembly
With all the ingredients cooked and ready the fun part of assembling the buns begins. It’s entirely up to you what you put in each one and I like to mix them up so that there is a variety each morning.
Begin by placing a damp piece of kitchen towel on a piece of baking paper. Then put a muffin on top and fill it with a selection from the egg, sausage, bacon, turkey and cheese.

A squirt of HP sauce (or ketchup) finishes the breakfast muffins off perfectly.

Once assembled, simply wrap the muffin in the baking paper and store in the freezer. These can then be taken out as needed and placed in a microwave oven to heat up. If reheating from frozen 2 minutes is enough to leave them nice and steaming. If defrosted 1.5 minutes will be enough.
