Weekend prep work usually concerns bike cleaning and maintenance tasks. However, perhaps almost as important is preparing food to bring with me and fuel the commute. The most important of these is my breakfast when I get to the office. If I don’t refill those calories I just cannot concentrate properly and my stomach will be rumbling all morning.
Previously I posted about my breakfast muffins, which are amazing, but I think these are even better. Actually, I struggle to think of anything I would prefer to have. Especially so when I am actually tucking into one! So, please read on for details of these superb breakfast wraps. They are packed with flavour, full of energy, simple to transport and east to reheat (if you have a microwave). The process below made 16 wraps, which are stored in the freezer and just taken out as and when you fancy one.
Ingredients
As with the breakfast wraps these are simple ingredients available from any supermarket.
- Sausage meat (2 packs)
- Mushrooms (250g)
- Onions (3 medium)
- Peppers (3 medium)
- Eggs (6)
- Cheese (ready grated, so much easier!)
- Cajun seasoning
- Tortilla wraps (16)
Method
There is nothing very difficult involved in making these. A knife, frying pan and wooden spoon are pretty much all that you need.
1. Slice up the onions, peppers and mushrooms then fry in a little oil until soft and caramelised.
2. Scramble the eggs in the pan with a little salt and pepper until just cooked. Make sure not to let them dry out.
3. Fry the sausage meat in the pan along with some Cajun seasoning. Add as much of this as you like, but this is the secret ingredient which really make these wraps sing.
Assembly
This part is easy (my wife even let me help out here).
Lay out the cooked ingredients next to the wraps and the cheese. Fill each wrap with a little of the vegetables, eggs and sausage meat. Then top it off with some cheese.
Finally, close the wrap off by folding over each end and rolling it shut. Some cling film around each one keeps them secure and ready to be stored in the freezer.
These really are a perfect breakfast to take to work. Straight from the freezer there is no worry about them getting squashed or spilling out into your bag. They are also the perfect size for fitting into a jersey pocket if you are lucky enough to be able to commute without luggage (which I sometimes manage).
To re-heat just wrap in a bit of kitchen towel and stick in the microwave for 2 to 2.5 minutes. Then enjoy the warm, juicy goodness and I guarantee you will feel revived!
One little warning though: depending how well they are wrapped the last few bites might have a bit of juice oozing out. A bit of care is needed just in case you end up with melted cheese or Cajun oil down your shirt or over your keyboard (not that this has ever happened to me …)
